How to Make It
- In a heavy-bottomed frying pan, heat the oil and the butter. Add the garlic and sumac and cook for 1–2 minutes, until it begins to color. Crack the eggs into a bowl and pour into the pan.
- Sprinkle the mint over the eggs and cover the pan with a lid. Reduce the heat and cook until the whites are just set.
- Sprinkle a little salt over the eggs, divide into four portions, and serve with toast or flatbread.
