The tangy, buttery sauce makes this fish dish something really special and I find that children really love the flavours. Defo a regular for my household.
Ingredients
- 4 fillets of sea bass or similar white fish
- ½ tsp ground cardamom
- ¼ tsp ground cinnamon
- ¼ tsp cayenne
- 2 tbsp butter
- 1 garlic clove, crushed
- 2 lemons juice and finely grated zest
- 1 orange and 2 mandarins juice
How to Make It
- Pat the sea bass fillets dry. Mix the cardamom, cinnamon and cayenne with a good pinch of salt and some ground black or white pepper. Sprinkle this mixture evenly over both sides of the fish.
- Heat a tablespoon of olive oil in a large frying pan. When it’s hot, add the sea bass fillets skin-side down. Fry them for 2–3 minutes until the skin is crisp and you can see that the flesh around the edges is turning opaque. Carefully turn the fillets over and cook them for a further minute. Remove them from the pan and keep them warm.
- Add the butter, garlic, lemon zest and juice and the orange juice to the pan and season with salt and pepper. Turn up the heat and simmer until the sauce is reduced to a syrupy consistency.
- Serve the fish with the sauce and perhaps some steamed new potatoes and green beans or broccoli or just a salad.
