How to Make It
- Heat the oil in a large cast-iron skillet over medium heat until it reaches 350°F. The oil should be about ½ inch deep so that it comes about halfway up the sides of the fish sticks.
- Cut the cod fillets into sticks 2½ inches by 1 inch by 1 inch. Season all sides of the sticks with the salt. Wrap a slice of prosciutto around each fish stick; the prosciutto is sticky, so it will stay closed without needing to be secured with a toothpick.
- Fry the fish sticks in batches to avoid overcrowding. Fry each batch for a total of 5 minutes, or until the fish is cooked through and the prosciutto is crispy, flipping halfway through.
- Place the fish on a serving platter. Serve with the sauce, lemon slices, and Grilled Radicchio, if desired.
