Ingredients
- 1 tablespoon coconut oil or other keto-friendly fat, for frying
- ¼ pound chorizo or Italian sausage, removed from casings
- ¼ cup diced onions
- 1 teaspoon finely chopped garlic, or cloves from ½ head roasted garlic
- 1 cup diced tomatoes with juices, jarred or fresh
- 1 tablespoon tomato paste
- 2 tablespoons smoked paprika
- 1 teaspoon fine sea salt
- 4 large eggs
- Chopped fresh herbs of choice, for garnish (optional)
How to Make It
- Heat the coconut oil in a large cast-iron skillet over medium heat. Add the sausage, onions, and garlic and cook until the sausage is cooked through, about 5 minutes, stirring to break up the sausage.
- Add the tomatoes with juices, tomato paste, paprika, and salt and stir until well combined.
- Crack the eggs over the tomato mixture, cover, and cook for 7 minutes, or until the eggs are cooked to your liking. Garnish with fresh herbs, if desired.
