Ingredients
- 12 thin slices mortadella or good-quality bologna
- 12 ounces goat cheese
- 12 fresh basil leaves
- 1½ cups marinara sauce, homemade or store-bought
- 1 tablespoon unsalted butter or coconut oil
How to Make It
- Lay the slices of the mortadella on a clean, dry work area. Spoon 1 ounce (about 2 tablespoons) of goat cheese in the center of each slice and lay a basil leaf on top of the cheese.
- Fold each mortadella over the cheese to form a square packet. Secure the edges with toothpicks, creating mortadella ravioli.
- Warm the marinara sauce in a saucepan over medium-low heat.
- While the sauce is warming, fry the ravioli: Heat the butter in a large sauté pan over medium-high heat. Fry each mortadella ravioli until the ravioli is slightly charred on both sides and the cheese is melted, about 6 minutes. Remove from heat and discard the toothpicks.
