When Craig and I first married, our vacations consisted of a campsite, a tent, and our dog, Teva. On our first camping trip in the Apostle Islands in northern Wisconsin, I brought premade meals in Pyrex glass containers. As Craig put up the tent, I put a keto lasagna over the fire to heat. I went over to help with the tent when we heard a huge explosion. Craig helpfully informed me that you can’t place glass over a hot fire.
So if you are looking for an easy campfire meal, try this casserole in campfire packets instead. The packets are easy to create—just line foil with unbleached parchment paper to keep aluminum from leaching into the food and tightly seal the edges. Make them before you leave home and all you have to do is heat them over your campfire. And if you don’t want to go camping? I’ve included methods for making this dish on the stovetop and in the oven.
Ingredients
- Bacon fat or other fat of choice, for greasing the packet
- ½ pound 80% lean ground beef
- ½ onion, thinly sliced
- 2 (8-ounce) packages sliced mushrooms
- 1 green or yellow bell pepper, seeded and cut into strips or chunks
- 1 medium tomato, cut into chunks
- 1 medium zucchini, cut lengthwise into quarters and then crosswise into quarter-moons
- 3 tablespoons unsalted butter (or nondairy fat for dairy-free), melted
- 1 teaspoon Seasoned Salt or fine sea salt
- ½ teaspoon fresh ground black pepper
- Easy Ketchup or other keto sauce, for serving
- Lay out 2 sheets of aluminum foil and 2 sheets of unbleached parchment paper that are each 12 inches square.
- Lay one of the sheets of foil down on a counter and place one of the sheets of parchment paper on top of it. Liberally grease the parchment with bacon fat.
- Place the meat and vegetables on the parchment paper, making sure to crumble the ground beef throughout. Drizzle with the butter and season with the Seasoned Salt and pepper.
- Place the second sheet of parchment paper on top of the ground beef and veggie mixture, followed by the second sheet of foil. Roll the edges up all around to tightly seal the packet.
- Start a campfire or charcoal grill well before you want to start cooking, so it has established coals by the time you begin.
- Place the packet over the hot coals. Cook for 10 minutes, then carefully flip the packet and cook for another 10 minutes. Remove from the heat. Once the foil is cool to the touch, unwrap. Douse with your favorite keto sauce and enjoy!
