Dates are packed with fiber and are the perfect sugar substitute. By adding soya flour to this recipe, you are helping to decrease your bad cholesterol levels.
Ingredients
- ½ teaspoons butter (for greasing)
Date Puree
- ¾ cup cold water
- ½ cup dates (seeded, chopped)
Dough
- ½ cup soya flour
- ½ cup white millet flour
- ½ cup butter
- 4 tablespoons powdered sugar
- 3 tablespoons cashew nuts (chopped)
- 1½ teaspoons cocoa powder
How to Make It
- Preheat the main oven to 360 degrees F. Lightly grease a baking tray.
- First, make the date puree. Take a deep saucepan, fill with ¾ cup of cold water and add the chopped dates. Bring to boil.
- Reduce the heat and cook for 8-10 minutes, or until the dates are mashed. Set to one side to cool.
- To a mixing bowl, add the soya flour, white millet flour, butter and powdered sugar. Using clean, cool fingertips combine until a breadcrumb consistency is achieved.
- Add the date puree mixture to the cashews and cocoa powder. Stir well to combine and knead to form semi-stiff dough. Cover the dough and place in the refrigerator for 15 minutes.
- Divide the chilled dough into ten equal portions and roll each one into a small round shape ball and place on the baking sheet. Gently press down on each small bowl to flatten a little.
- Transfer to the preheated oven and cook for between 30-35 minutes.
- Allow to cool before storing in an airtight, lidded container.
