This recipe reminds me of visiting Tasty Treat, the local ice cream shop, as a little girl and getting my ice cream cone covered with a crispy chocolate coating.
Ingredients
- ¼ cup plus 2 tablespoons coconut oil
- ¼ cup plus 2 tablespoons unsweetened cocoa powder
- ½ cup Swerve confectioners’-style sweetener or equivalent amount of liquid or powdered sweetener
- 1 teaspoon vanilla extract, or seeds scraped from 1 vanilla bean (about 6 inches long)
- ½ teaspoon fine sea salt
How to Make It
- Melt the coconut oil in a small saucepan over low heat. Stir in the cocoa powder, sweetener, vanilla, and salt until completely melted. Allow to cool a bit before drizzling over ice cream. Store in the fridge for up to 2 weeks or in the freezer for up to 1 month.
