Serve up the perfect meaty stew for a midweek meal on a cold winter’s day.
Ingredients
- 1 pound ground hamburger
- Nonstick cooking spray
- ½ onion (peeled, chopped)
- 1 pound baby carrots
- 6 large potatoes (peeled, cut into cubes)
- 1 clove garlic (peeled, minced)
- 3 cups water
- 1 (6 ounce) can tomato paste
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp onion powder
- 1 tsp oregano
- Crusty bread (to serve)
How to Make It
- In a pan, over moderate heat, brown the hamburger all over using the back of a wooden spoon to break the meat up.
- Spray your crockpot with nonstick cooking spray.
- In the crockpot, combine the hamburger, with the carrots, potatoes, and garlic.
- In a bowl, whisk the water with the tomato paste, salt, black pepper, onion, and oregano.
- Pour the water-oregano mixture over the beef mixture and cover the crock pot with its lid.
- On low, cook for 6-8 hours, until cooked through. You may need to add additional water during cooking to avoid the level getting too low and preventing the potatoes from cooking.
- Serve with crusty bread.
