Ingredients
- 1 pound peeled and deveined medium shrimp, finely chopped
- ⅓ cup mayonnaise
- ¼ cup bread crumbs
- 1 large egg
- 1 tablespoon chopped fresh chives
- 1 tablespoon prepared horseradish
- Kosher salt and black pepper
- 3 tablespoons olive oil
- 6 cups mixed greens
- 1 cup cherry tomatoes, quartered
- 4 radishes, thinly sliced
- 3 tablespoons of your favorite vinaigrette
How to Make It
- Mix together the shrimp, mayonnaise, bread crumbs, egg, chives, horseradish, 1 teaspoon salt, and ¼ teaspoon pepper. Form the mixture into 8 patties; chill until firm.
- Cook the patties in the oil in a large nonstick skillet until cooked through. Toss the greens, tomatoes, and radishes with the vinaigrette. Serve with the shrimp cakes.
