Paired with roasted chicken or broiled salmon and steamed broccoli, this earthy jeweled pilaf is an easy side dish for a colorful meal.
Ingredients
- 1 cup wild rice, rinsed and drained
- 1 cup regular brown rice
- 1 (10¾-ounce) can condensed cream of mushroom with roasted garlic or condensed golden mushroom soup
- 1 cup sliced fresh mushroom
- 1 cup shredded carrots
- ½ cup sliced celery
- 1/3 cup chopped onion
- ¼ cup snipped dried apricots
- 1 tsp dried thyme, crushed
- 1 tsp poultry seasoning
- ¾ tsp salt
- ½ tsp pepper
- 5½ cups water
- ½ cup dairy sour cream
How to Make It
- Combine uncooked wild rice, uncooked brown rice, soup, mushrooms, carrots, celery, onion, apricots, thyme, poultry seasoning, salt, and pepper in a 3½ or 4 quart slow cooker. Stir in water.
- Cover; cook on low-heat setting for 7 to 8 hours or on high-heat setting for 3½ to 4 hours. Stir in sour cream and serve.
