If a breakfast of eggs soft-scrambled with roasted bone marrow sounds a little crazy to you, let me list the reasons you should consider starting your day this way:
- Bone marrow is one of the few natural sources of vitamin K2, which helps reverse artery calcification, reverse Alzheimer’s, and increase fertility and has anti-aging properties as well as many other healing properties.
- Marrow is also one of the best, densest sources of fat-soluble vitamins.
- Marrow is a great high-fat, moderate-protein food for a keto-adapted diet.
Still not convinced? If the health reasons alone haven’t convinced you, then the incredible taste and creamy texture of bone marrow will!
Ingredients
- 2 (2-inch) cross-cut beef or veal marrow bones, split lengthwise
- 1 teaspoon fine sea salt, divided
- ½ teaspoon fresh ground black pepper, divided
- 5 large eggs
- 1 teaspoon fresh herbs of choice (whole or chopped leaves, depending on size), for garnish (optional)
How to Make It
- Preheat the oven to 450°F.
- Rinse and drain the bones and pat dry. Season them with ½ teaspoon of the salt and ¼ teaspoon of the pepper and place them cut side up in a roasting pan.
- Roast for 15 to 25 minutes (the exact timing will depend on the diameter of the bones; if they are 2 inches in diameter, it will take closer to 15 minutes), until the marrow in the center has puffed slightly and is warm. To test for doneness, insert a metal skewer into the center of the bone; there should be no resistance when it is inserted, and some of the marrow will have started to leak from the bones.
- Heat a cast-iron skillet over medium heat. Place some of the liquid from the roasting pan in the skillet. Using a small spoon, scoop the marrow out of the bones into a bowl, then add the eggs and the remaining ½ teaspoon of salt and ¼ teaspoon of pepper and whisk until well combined. Pour the egg mixture into the skillet. Gently scramble the eggs until they are set and creamy. Garnish with fresh herbs.
- Best served fresh. Store extras in an airtight container in the fridge for up to 3 days.
