Ingredients
- 2½ cups low-fat milk
- 14-oz can light coconut milk
- ½ cup turbinado sugar
- 1 cup arborio rice
- 1 stick cinnamon
- 1 cup dried cranberries, optional
How to Make It
- Spray crock with nonstick spray.
- In crock, whisk together the milk, coconut milk, and sugar.
- Add in the rice and cinnamon stick.
- Cover and cook on Low about 2–2½ hours, or until rice is tender and the pudding has thickened.
- Remove cinnamon sticks. If using cranberries, sprinkle on top of each bowl of Coconut Rice Pudding.
