Ingredients
- 2 tablespoons coconut oil
- 2½ cups coconut flakes
- ¼ cup raw coconut flour
- 4 tablespoons sprouted organic brown rice protein powder, or other protein powder
- handful of goji berries
- 1 teaspoon vanilla bean powder
- ¼ teaspoon sea salt or Real Salt
- ¼ cup raw honey (crystallized), light colored
How to Make It
- Liquefy the coconut oil by placing it into a glass jar and setting the jar in hot water, or use a double boiler.
- Mix all dry ingredients together in a large bowl.
- Add coconut oil and raw honey, and mix by hand for best results.
- Roll into balls, or cut into other shapes with a cookie cutter. This batter is really sticky, so wash your hands after rolling every four cookies or so.
- Chill for about 1–2 hours, until hardened into a soft cookie. Store chilled.
