Emerald baby spinach is braised in silky coconut milk with a hint of nutmeg and cayenne and some crunchy cashews.
Ingredients
- 3 tbsp coconut oil
- 1 garlic clove, minced
- 1 lb (450 g) baby spinach, coarsely chopped
- ¾ cup full-fat coconut milk
- ¼ tsp freshly ground nutmeg
- 0.12 tsp cayenne pepper (optional)
- ½ tsp sea salt
- ½ cup cashews
How to Make It
- Heat a large frying pan or skillet over medium-high heat. Add coconut oil and wait for 15 seconds.
- Add garlic and cook for 30 seconds, or until fragrant. Add baby spinach, full-fat coconut milk, nutmeg, cayenne pepper (if using), and sea salt. Stir until wilted, or about 2 to 3 minutes.
- Add cashews and stir to combine. Season with additional sea salt, if desired. Serve hot.
