Ingredients
- 2 pounds (5 medium) peeled medium-starch potatoes (such as Yukon gold)
- 1 medium red onion, finely chopped (¾ cup)
- ¼ cup all-purpose flour
- 2 eggs, lightly beaten
- 2 tablespoons canola oil
- Kosher salt and black pepper
- Applesauce and sour cream, for serving
How to Make It
- Grate the potatoes with a box grater or food processor with the shredding blade. Toss with the onion, flour, eggs, 1 tablespoon of the oil, 1 teaspoon salt, and ¼ teaspoon pepper.
- Drop by rounded tablespoonfuls onto 2 baking sheets brushed with the remaining 1 tablespoon of oil. Press lightly to make patties. Bake at 450°F until golden brown on the bottom, 10 minutes. Turn with a metal spatula and rotate the baking sheets. Bake another 5 minutes or until golden. Serve with applesauce and sour cream.
