Ingredients
- Olive oil
- 2 lb extra-lean ground beef
- 2 large onions, diced
- 6 garlic cloves, minced
- 2 red bell peppers, diced
- 2 large (approx 32-oz.) cans kidney beans
- 2 large cans diced tomatoes
- 2 cups of beef broth
- 1 (6-oz) can Italian-style tomato paste
- 2 tbsp cumin
- ¼ cup cocoa powder
- 2 tsp cinnamon
- A few splashes of hot sauce
- Salt and pepper to taste
How to Make It
- Select the Sauté mode on the Instant Pot and let it heat up. Add enough olive oil to lightly coat bottom of the pot.
- Add beef, onions, garlic, and bell peppers. Sauté for 5 minutes.
- Add remaining ingredients (be sure to add juice from beans and the diced tomatoes) to pot and stir to incorporate. Secure lid and pressure cook on high for 15 minutes.
- Allow pressure to release naturally and remove the lid. Stir and serve with your favorite sides.
