This chocolate cake has a very rich taste, and it looks amazing on the table.
Ingredients
For the Dough
- 4 eggs
- 2 bananas
- ½ cup Prunes, dried and pitted, 8 pieces
- ½ cup 4 oz Whole grain flour
- 2 tbsp Liquid honey
- 2 tbsp Brown sugar
- 2 tbsp Olive/coconut oil
- 2 tbsp Cacao powder
- 1 tsp Baking powder
For the Topping
- 60 g Dark chocolate, 12 pieces
- 1 oz 3 tbsp Greek yogurt
- 4 oz ½ cup Fresh or frozen berries
How to Make It
- Preheat the oven to 380°F.
- Prepare the dough. You can make it two ways: using a blender or manually.
- Way 1: Take peeled bananas; cut them, and place in a blender cup. Add the rest of ingredients for the dough in a blender and mix well.
- Way 2: Whisk eggs, honey, and sugar in a bowl. Shred prunes into small pieces and add to the bowl. Add mashed bananas and the rest of ingredients. Mix well using a tablespoon.
- Prepare 2 baking trays. Apply oil on the tray surface or place a layer of wax paper at the bottom of each tray.
- Pour out half the dough in each tray; spread it using a tablespoon.
- Place the trays in the oven for 40 minutes.
- To check if the dough is ready, just poke it with a fork—the pieces of the dough should not stick to a fork when you remove it. Extend the time by 5–10 minutes, if necessary.
- Remove the cake and cool it down. Prepare the Chocolate Cream
- Melt 10 pieces of the chocolate (50 g) in the microwave for 3 minutes.
- Mix melted chocolate—it should be soft like a butter. Add Greek yogurt and mix well using a tablespoon. Prepare the Topping
- Grate 2 pieces (10 g) of the chocolate and place it in a fridge. Clean the berries. Decorate your Cake
- Place the first layer of the cake on a serving plate; add chocolate cream, and spread it using a tablespoon.
- Place the second layer of the cake on the top; add chocolate cream on it, and spread it using a tablespoon.
- Add berries on the top, and sprinkle with grated chocolate.
