Ingredients
- 5 oz (140 g) frozen peas
- 2 ripe avocados, halved, peeled, and pitted
- 4 scallions, trimmed
- ¼ cup lemon juice
- ¼ oz (10 g) cilantro
- chili powder to taste
- 2 cups chicken stock, chilled
- 1 tbsp sour cream
- salt and freshly ground black pepper
To Garnish
- ¼ cup sour cream
- 2 tbsp finely chopped cilantro
How to Make It
- Blanch the peas in boiling water for 2 minutes and drain.
- Purée all the ingredients together in a food processor until smooth; taste to check the seasoning.
- Garnish with the sour cream and finely chopped cilantro.
