One of my greatest summer pleasures is stepping outside to my herb garden, where with a few snips I can give a familiar vegetable a fresh new spin.

How to Make It
- Trim and slice the beans into bite-size pieces. In a large saucepan, bring water to a boil. Add the green beans and cook for 3 to 4 minutes, until the beans are crisp-tender. Immediately drain the beans. Cool to room temperature, then store in the refrigerator until ready to serve.
- Just before serving, toss the beans with oil and vinegar. Toss again with the garlic and mint. Season with salt and pepper.
