The third recipe which looks almost like the previous two is the Chicken, Shrimp, and Sausage Stew. This is a little different from the previous two, especially with the inclusion of chicken. This cooks very easily too, and it is as delicious as it sounds.
Ingredients
- 1 pound of andouille sausage, cut into ½ inch pieces
- 6 chicken thighs (I prefer skinless - 2¼ lbs.)
- 3 cups chopped onions
- 2 1⁄3 cups chopped green bell peppers
- 1¼ cups chopped red bell peppers
- 6 cloves garlic, minced
- 1 tablespoon dried oregano
- 2 teaspoons dried thyme
- 1 tablespoon paprika
- 1 (28 ounce) can diced tomatoes with juice
- 1 (14½ ounce) can chicken broth
- 1 cup dry white wine
- 1 pound of uncooked large shrimp, peeled and deveined
- salt and pepper
How to Make It
- Select the saute function on the foodi to cook the sausage for about 4 minutes or until it gets browned.
- The next thing to do after sautéing the sausage is to transfer the sausage to a large bowl.
- After that, the next step is to sprinkle the chicken thighs with pepper and salt.
- Place the chicken in your foodi and sauté it until it becomes brown on both sides.
- After getting your chicken browned, you can then transfer the chicken to the bowl with the sausage.
- The next thing is to discard all the drippings; however, you should leave at least 1 tablespoon of dripping.
- After draining your pot, you should add onions and pepper to it; cook using the sauté function for 15 minutes, until the onions become soft, golden brown and tender.
- The next step is to add garlic, oregano, thyme and paprika; sauté them for 2 minutes. After this, it is now time to return the sausage and chicken into your Foodi.
- Add tomatoes with juice, chicken broth, and wine.
- Bring the mixture to a boil.
- Set the temperature to medium, cover and simmer until chicken is cooked and very tender.
- The next step is to add shrimp and simmer for about 5 minutes.
- Apply seasoning to taste with salt and pepper.
