How to Make It
- Put the almonds, coconut and cocoa powder in a food processor and whiz until finely chopped. Then, with the motor running, gradually add the dates and the dried cherries until everything is finely chopped and well combined. Add the fresh or frozen cherries, one at a time, pulsing until the mixture comes together in a ball.
- Roll the mixture into 20 balls (about 1 tbsp mixture per ball). Put the extra coconut on a large plate and roll each ball in the coconut to lightly coat. Transfer to an airtight container and chill in the fridge until firm.
