Ingredients
- 8 large eggs
- ½ cup beef bone broth, store-bought or homemade (or vegetable broth for vegetarian)
- 1 teaspoon fine sea salt
- ½ cup (1 stick) unsalted butter
- ½ cup shredded sharp cheddar cheese (about 2 ounces)
- Chopped fresh herbs of choice, for garnish (optional)
How to Make It
- In a small bowl, whisk together the eggs, broth, and salt.
- In a medium-sized saucepan, melt the butter over medium heat. Add the egg mixture to the pan and cook until the mixture thickens and small curds form, all the while scraping the bottom of the pan and stirring to keep large curds from forming. (A whisk works well for this task.)
- Once curds have formed and the mixture has thickened, add the shredded cheese and stir until well combined. Remove from the heat and transfer to a serving bowl. Sprinkle with chopped herbs, if desired, and serve.
