- ½ pound pork tenderloin
- 2 tablespoons Pecorino cheese
- 2 tablespoons feta cheese
- 1 green onion, chopped
- 1 tablespoon cashews, finely crushed
- ½ teaspoon onion, finely chopped
How to Make It
- Preheat grill.
- Using a sharp knife, carefully cut a pocket, running lengthwise, in the pork tenderloin.c
- Place the green onion, onions, crushed cashews, Pecorino cheese, and feta cheese in a medium bowl and mix well to combine.
- Spoon the mixture into the pocket and secure the pocket with a skewer or wrap in string.
- Sprinkle the pork with salt and freshly ground pepper and grill until golden brown and juices run clear.
