These simple and quick-to-prepare quesadillas are near the top of my list of Foods Kids Are Likely to Enjoy. They also work well as a unique breakfast, a portable lunch, or a quick dinner.
Ingredients
- 1 tablespoon butter
- ½ red bell pepper, finely chopped
- 2 scallions, finely chopped
- 4 eggs
- Cup milk
- ½ cup shredded cheese such as Cheddar, Swiss, or horseradish, divided
- 4 Wheat Belly Tortillas
How to Make It
- In a large skillet over medium heat, melt the butter. Cook the pepper and scallions, stirring frequently, for 5 minutes, or until tender. In a small bowl, whisk the eggs and milk. Pour into the skillet and add ¼ cup of the cheese. Cook, stirring frequently, until the mixture is scrambled and the eggs are cooked through but still moist. Cover and set aside.
- Grease a medium skillet and place over medium heat. Place 1 tortilla in the skillet and sprinkle with 1 tablespoon of the remaining cheese. Add half of the egg mixture, sprinkle with 1 tablespoon of cheese, and top with a second tortilla. Cook for 2 minutes, or until the cheese is melted. Turn over and cook for 1 minute. Repeat.
