Ingredients
- ½ head romaine lettuce
- ½ pound boneless skinless chicken thighs
- 2 bacon strips, cooked and crumbled
- ½ cup cheddar cheese, shredded
- 4 tablespoons Caesar dressing
- ½ tablespoon dried oregano

- 1 tablespoon canola oil
Optional Garnish
- Croutons (I personally love to add just a few to add the extra crunch)
How to Make It
- Add a little oil to a large skillet and heat over medium-high heat.
- Add the chicken and cook until golden brown on all sides and cooked through. Remove from the skillet and let it cool.
- Chop the chicken into cubes and place in a large bowl.
- Reserve 2 large lettuce leaves and tear or cut the remaining lettuce and add to the chicken along with the bacon crumbles and Caesar dressing. Toss well to coat.
- Divide the salad into 2 portions and place onto reserved romaine leaves. Sprinkle the oregano generously, top with cheese and serve.
