Classic buttermilk pancakes are served in diners all over the USA. They taste fantastic but are not quite as fluffy as American pancakes. This delicious dish is usually served with maple syrup and butter.
Ingredients
- 6 oz (175 g) plain flour
- 1 tsp bicarbonate of soda
- ½ tsp salt
- 2 oz (50 g) polenta
- 2 oz (50 g) sugar
- 1 tbsp butter
- 12 fl oz (350 ml) buttermilk
- 2 free-range eggs
- Butter for cooking
- Butter and maple syrup, to serve
How to Make It
- Mix the dry ingredients in a mixing bowl.
- Melt the butter and mix it with the buttermilk and eggs.
- Mix the egg batter with the dry ingredients.
- Cook the pancakes in butter until golden in a frying pan over medium heat.
- Serve warm with butter and maple syrup.
