I am a huge fan of the television show Top Chef. In one episode the contestants were challenged to make a holiday meal entirely in one pot. They could cook something, empty the pot, and reuse it, but everything had to be cooked in that one vessel. Here is my one-pot entry!
Ingredients
- 6 bone-in chicken thighs with skin
- ½ teaspoon fine sea salt
- ½ teaspoon fresh ground black pepper
- 8 tablespoons unsalted butter, divided
- 4 cups shredded purple or green cabbage (about 1 medium head)
- 1 head roasted garlic or 3 cloves raw garlic, minced
- 2 tablespoons chopped fresh thyme, tarragon, sage, or your favorite herb
How to Make It
- Season the chicken thighs with the salt and pepper. Melt 2 tablespoons of the butter in a large pan over medium heat. Once the butter is hot, sear the chicken for 10 minutes, or until golden brown on both sides and cooked through. Remove from the pan and set aside.
- Place the cabbage in the pan and cook over medium heat, stirring frequently, for 15 minutes, or until cooked. Remove from the pan and set on a serving dish.
- Place the remaining 6 tablespoons of butter in the pan and heat on high until the butter starts to froth and get golden brown, stirring often. Remove from the heat and squeeze the roasted garlic from the head into the browned butter and stir to incorporate.
- Arrange the chicken thighs on the cabbage “pasta” and pour the garlicky brown butter over chicken. Sprinkle with thyme or your favorite herb.
