- 2 pounds new potatoes, scrubbed
- 1 Tablespoon olive oil
- ½ teaspoon kosher salt

- Preheat the oven to 350°F.
- Toss the potatoes with the olive oil and salt. Arrange on a baking sheet and roast for about 45 minutes, turning once, until tender.
- Serve alongside the reheated brisket. For the brisket
- Place in a saucepan with ½ cup water. Cover and heat on medium for about 5 minutes.
