Ingredients
- 1 cup red wine vinegar
- 1 cup water
- 1 large onion, chopped
- 5 whole cloves
- 1 tbsp dry dill
- ¼ cup sugar
- 1 tbsp ground pepper
- 2 tsp salt
- 3–4-lb beef roast
How to Make It
- Add red wine vinegar, 1 cup water, onion, cloves, dill, sugar, pepper, and salt to the Instant Pot.
- Set Instant Pot on Sauté and bring mixture to a boil. Stir to dissolve sugar and salt.
- Place the steam rack into the Instant Pot and the beef roast on top. Secure lid and pressure cook on high for 2 hours.
- Let pressure release naturally. Remove lid when safe. Check roast for tenderness. Serve with red cabbage, Country-Style Potatoes, and freshly baked rolls.
