A hearty and filling salad that’ll make you go back for more!
Ingredients
For the Dressing
- 5 tbsp olive oil
- 5 tbsp red wine vinegar
- ½ tsp salt
- ½ tsp dried oregano
- 2 tbsp fresh parsley, chopped
- 2 cloves garlic, minced
For the Salad
- 2 cups broad beans
- 2 cups cannellini beans, rinsed and drained
- 2 cups chickpeas, rinsed and drained
- ¼ cup olives, chopped
- ½ red pepper, finely chopped
- ½ small red onion, finely sliced
- ½ English cucumber, chopped
How to Make It
- In a small bowl, combine the ingredients for the dressing and set aside.
- In a large bowl, combine the salad ingredients and top with the dressing. Enjoy!
