Ingredients
- ¼ cup vegetable broth
- 1 small yellow onion, diced
- 1 clove garlic, chopped
- 1 oz kombu or arame seaweed, soaked in water for about 10 minutes to reconstitute
- 1 cup green cabbage, shredded
- ½ cup red cabbage, shredded
- 1 Granny Smith apple, diced
- 1 teaspoon maple syrup
- Sea salt to taste
- ½ teaspoon freshly ground black pepper
- 1 tablespoon apple cider vinegar
How to Make It
- Heat the vegetable broth in a large pan over medium heat and sauté onion, garlic, and seaweed until tender, about 3 minutes.
- Add green and red cabbage, apple, maple syrup, salt, pepper, and vinegar, and cook covered over low heat for approximately 20 minutes.
- Garnish with fresh fruit.
