Ingredients
- 500 g beef mince
- 1 cup dry breadcrumbs
- 250 g pork mince
- 2 eggs
- 1 brown onion, diced
- 2 tablespoons tomato sauce
- 4 cloves garlic, diced
- Salt and pepper
- 1 medium carrot, grated
- ¼ cup BBQ sauce
- 1 medium zucchini, grated
How to Make It
- Preheat camp oven. Grease a loaf tin.
- In a large bowl, combine mince, onion, garlic, carrot, zucchini, breadcrumbs, eggs and tomato sauce. Season with salt and pepper.
- Add mixture to loaf tin and smooth the surface.
- Place loaf tin inside camp oven, put the lid on and bake for an hour or until meatloaf is firm to touch. When firm, brush top of meatloaf with a thick layer of barbecue sauce. Return to camp oven for 15 minutes until sauce has caramelised. Stand for 5 minutes before serving.
