Ingredients
- 3½ oz (110 g) butter
- 2 oz (50 g) soft brown sugar
- 4½ oz (125 g) golden syrup
- 2 eggs
- 4½ oz (125 g) plain flour
- 2 tsp baking powder
- 2 tbsp ground ginger
- 2 medium bananas, mashed
How to Make It
- Preheat the oven to 180°C (350°F), Gas mark 4. Line the base and sides of the loaf tin with baking parchment.
- In a bowl, cream the butter until soft, then beat in the brown sugar and golden syrup. Beat in the eggs one at a time. The mixture will look sloppy and curdled, but don’t worry. Sift in the flour, baking powder and ginger and fold together.
- Next, mix in the mashed bananas to form a soft, wet dough. Pour into the loaf tin, place in the oven and bake for about 45 minutes until risen, golden brown and a skewer inserted into the centre comes out clean.
