A crisp, cake-like cookie with a soft center baked using soy flour.
Ingredients
- 1 cup whole wheat flour
- 2 tablespoons low-fat soy flour
- ½ teaspoons baking soda
- ½ teaspoons salt
- ½ teaspoons nutmeg
- ½ teaspoons pumpkin pie spice
- ½ cup raisins
- 1 small ripe banana
- 2 eggs
- ½ cup dates (pitted, packed)
- 1 teaspoon vanilla extract
How to Make It
- Preheat the main oven to 400 degrees F.
- In a large bowl, combine the dry ingredients along with the raisins.
- In a food blender, blend the banana, egg, dates and vanilla extract until a consistent mixture. Transfer the mixture to the dry ingredients. Stir well to combine.
- Drop the mixture onto a cookie tray or sheet using a teaspoon. Bake in the oven for 6-10 minutes, or until a knife placed in the center of the cookies comes out clean.
- Allow the cookies to cool before serving.
