    Baked Salmon & Asparagus with Hollandaise Recipe

    Ingredients

    • 2 large (400 g/14.1 oz) bunches asparagus
    • 2 tablespoons (30 ml/1 fl oz) ghee or extra virgin olive oil
    • Salt and freshly ground black pepper, to taste
    • 2 medium (300 g/10.6 oz) salmon fillets
    • 2 servings Hollandaise Sauce
    How to Make It
    1. Preheat the oven to 400°F (200°C, or gas mark 6). Clean the asparagus and snip off their woody ends. Arrange them on a baking sheet and toss with half of the ghee. Season with salt and pepper.
    2. Place the salmon on another baking sheet and drizzle with the remaining ghee. Season with salt and black pepper and set in the oven, along with the asparagus, for 20 to 25 minutes.
    3. While the fish and asparagus are baking, make the Hollandaise sauce. When done, place the asparagus and salmon on a serving plate and top with the Hollandaise sauce. Serve immediately.
