How to Make It
- Preheat the oven to 400°F. Lightly grease a 9- × 9-inch glass baking dish.
- Arrange the cod filets in the dish so they are not touching. Season the filets with salt and pepper. Cover the dish with foil and bake for about 15 to 20 minutes or until the filets are completely opaque and flake easily.
- Prepare the zucchini by first washing them under cold water and then slicing off the stem end. Use a spiral slicer to cut the zucchini into “noodles.” If you do not have a spiral slicer, slice them into small matchsticks. You should have 2 pounds of prepared zucchini.
- Place the sliced zucchini in a glass bowl and add ¼ cup water. Cover the bowl with a plate and steam in a microwave for two to three minutes or until the zucchini are bright green and slightly softened. Drain excess water.
- Serve the cod filets with ½ cup of Roasted Red Pepper Sauce.
