The Spanish tortilla is nothing like what most people in the United States associate with a tortilla, as it contains no corn or fl our. Instead, a tortilla in Spain is essentially a savory cake made from potatoes and eggs and often may include other ingredients (as in this recipe). Spanish tortillas are a common sight in tapas bars or on tapas-style menus.
This classic Ukrainian cake which is common throughout European Russia today combines some of the spices that were introduced to Russia from Asia, via the Silk Road and Scandinavian sea traders, with the original sweetener for much of Europe: honey.
This fresh salsa, reminiscent of the type you might find at authentic Mexican restaurants, can be made as hot as you like it. Omit the chile pepper for mild, and double it for hot. This recipe is not designed for canning.
