I do like dishes that use a small amount of meat to add flavour and oomph to a dish. This warm salad makes a couple of lamb steaks go a long way with the help of some chickpeas and greens. You could also make it with some leftover roast lamb – just cut it into strips and lightly char it in a pan.
Yes, it’s my favourite cake in the world! Right alongside birthday cake, red velvet cake, cheesecake, pound cake, strawberry cake … you get the idea. I’m kind of into cake. A sweet and tender banana cake topped with a special strawberry frosting—it’s to die for. Banana baking in the oven is also one of my favourite smells, so again, it’s just all of Ashley’s greatest hits up in here. If you have another berry preference, you can change up the jam in the frosting recipe, but trust me, strawberry is the best.
My love of tacos and Mexican food is undying, but I often skip the taco shells and make a salad bowl with my favourite Mexican flavours instead. This Mexican inspired scramble is full of flavour and nutritious goodness. Don’t let the long list of ingredients put you off this recipe. It’s really quick and easy and you will probably have most of the ingredients, such as the spices, in your cupboard already. The mouthwatering combination of lime, coriander, mango, bean and tofu scramble makes this a real super-bowl. I’ve added protein-rich quinoa – a nutritional powerhouse – to continue the…
This recipe is my take on sumiso, one of the fundamental dressings or condiments of Japanese cuisine. The traditional version is made with a mixture of miso, egg yolks, mirin, and sugar that is cooked down until it becomes as thick as mayonnaise. Instead of using eggs, I went vegan with tofu and eliminated the cooking step for sumiso. I think you get much more flavor this way. If you are a glutton for even more flavor, add ginger, garlic, and scallions to supercharge this recipe. I find these ingredients balance the char on the string beans and complement the…
This popular Chinese dish is simple to make and, once you’ve prepared your ingredients, it can be on the table in just over 10 minutes.
Healthy and quick to prepare, this meal combines two of my all-time favorites: meatballs and chicken curry.
Vegetables for dessert! If you have never tried this type of squash before, don’t be afraid. It has a very neutral flavor and the texture when cooked is similar to cooked green apples. It’s a great way to “hit the sweet spot” and enjoy the flavors of an apple pie without the high carbs. Chayote squash has a natural thickening quality similar to okra when it is cooked. If the mixture becomes too thick, add a little more water.
