I’m not a vegetarian, but I’m all for vegetables taking center stage. This hearty soup is delicious without meat, but you can easily add a hambone to the pot with the water. Or stir in ½ cup of chopped ham about 15 minutes before the soup is finished cooking.

This curry paste provides a bright and spicy burst of flavor. There may be some ingredients in the recipe that are hard to find, but once you have them this curry is easy to make and can be kept in the freezer for months. This paste can be very useful in a variety of recipes with it you can instantly turn a bland dish into a flavorful one! This paste also combines many ingredients that are high in vitamins, minerals and antioxidants, making it a great medicinal food.
Very little work involved in this but you do need to allow some time for the marinade to work its magic. I love to serve these skewers with the Mediterranean vegetables on here to make a meal that feels like a summer holiday. The mint and yoghurt sauce on here is good with this too.
Angela, my roommate in university and one of my best friends on the planet, really loves coconut. She told me this story once about how she was talking to a really hot guy at a bar, and when he asked her what kinds of stuff she liked, all she could squeak out was “Coconut!” Ange is a world traveller these days, but next time she comes home, I’ll be using this pie to coerce her to stay a little longer.
This simple salad would be lovely served with almost anything. It could also be turned into a lunch dish with the addition of buffalo mozzarella.
