I am a huge fan of the television show Top Chef. In one episode the contestants were challenged to make a holiday meal entirely in one pot. They could cook something, empty the pot, and reuse it, but everything had to be cooked in that one vessel. Here is my one-pot entry!

Using some couscous in these meatballs makes them lovely and light – and you can serve the rest of the couscous alongside. I’m loving the orange and lemon flavour in the couscous too. There’s a bit of work but it’s kind of soothing and if you have some tomato sauce ready in the fridge or freezer the whole thing doesn’t take too long. And when you taste it – mmmmm, it’s well worth the time.
Lemony desserts serve well all year round: light and breezy for spring and summer, but so in season during the citrus-producing winter months as well. Lemon curd is generally full of egg, so our vegan version has the added bonus of cutting out all the cholesterol from this dessert as well—yippee! Paired with your favourite berries and a spoonful of whipped cream, these tarts will really sing.
Here is a salad to perk up your taste buds – try serving it with ham or spicy chicken, or stir some prawns or crab into it for a simple starter.
