Avocados may seem like an odd replacement for potatoes, but after they bake, these avocado fries truly take on a french fry—like texture. I was amazed at how fast they disappeared! When purchasing avocados for this recipe, choose firm ones so they are easy to slice and wrap.
This chicken works great in Turkey Tetrazzini or Buffalo Chicken Casserole. If you prefer extra-crispy and tasty skin, after seasoning the chicken well with salt and pepper, place it in the refrigerator overnight, uncovered, to allow the skin to dry. I also suggest trussing the legs with kitchen twine.
My boys adore my lasagna. Really, they would live off lasagna if I allowed it. To meet the demand, I usually make a quadruple batch of my Protein Noodle Lasagna (from my cookbook The Art of Healthy Eating) and store it in the freezer. When that stash of frozen lasagna runs out, I turn to this quick skillet lasagna, which I sometimes serve over Zoodles. I’m always dreaming up new recipes that are simple and easy to make. What is really goofy is that I almost forgot to include this one in this book, and it’s a family staple!
