This is one of my favorite make-ahead meals. The ground meat can be combined with fresh or frozen stir-fry veggies, or you can use lean ground chicken or turkey and whatever leftover fresh or cooked vegetables you may have on hand. Chinese five-spice powder often contains a combination of cinnamon, star anise, nutmeg, ginger, and Szechuan peppercorns. You can prepare the turkey and rice filling ahead of time, place serving portions in a resealable plastic bag, freeze them, and reheat them for use in wraps at a later time, stuffed into a whole-wheat pita, or over brown rice for a delicious dinner.
Ingredients
- 1 tablespoon canola or vegetable oil
- 8 ounces lean ground chicken or turkey
- 1½ tablespoons Chinese five-spice powder
- ¼ cup water or low-sodium chicken broth
- 3 cloves garlic, peeled and minced
- 3 tablespoons reduced-sodium soy sauce
- 1 (8-ounce) package fresh or frozen Asian stir-fry vegetables, thawed
- 3 tablespoons rice vinegar, plain or seasoned
- 3 tablespoons hoisin sauce
- ½ teaspoon sriracha sauce or other hot sauce (optional)
- 6 large romaine or butter lettuce leaves
- 2 green onions, white and green parts, chopped
How to Make It
- Heat the oil in a large skillet over medium-high heat; add the chicken and the five-spice powder. Break the chicken into small pieces with a fork or a potato masher. Add the water or broth, garlic, and 2 tablespoons soy sauce. Stir in the frozen vegetables. Stir for 4 to 5 minutes or until the chicken is brown and cooked through and any liquid has evaporated. Stir in the remaining 1 tablespoon soy sauce, the rice vinegar, and the hoisin sauce. Reduce the heat and simmer about 4 to 5 minutes to the blend flavors. Add the sriracha or other hot sauce, if desired.
- Place a lettuce leaf on each plate. Spoon ½ cup of the filling into each lettuce leaf, and sprinkle with the green onion. Wrap lettuce around the filling to enclose, or serve filled lettuce leaves open faced on a plate.
