Ingredients
- 3 lb sweet potatoes, peeled and cut into 1-½-inch pieces
- ½ cups snipped dried apples
- 0.33 cup apple juice
- ¼ cup packed brown sugar
- 3 Tbsp water
- 2 Tbsp light butter with canola oil, melted
- 0.12 tsp salt
- 0.12 tsp black pepper
- 0.12 tsp ground cinnamon
- ¼ cup chopped toasted pecans
How to Make It
- Lightly coat a 3-½- or 4-quart slow cooker with cooking spray. In the cooker combine sweet potatoes and apples.
- In a small bowl combine apple juice, brown sugar, the water, light butter, salt, pepper, and cinnamon. Pour over mixture in cooker.
- Cover and cook on low-heat setting for 7 to 8 hours or on high-heat setting for 3-½ to 4 hours. Use a slotted spoon to serve. Top with pecans.
