These apple cinnamon muffins are very tasty and as healthy as an oatmeal porridge.
Ingredients
For the Dough
- 6 eggs
- 1 medium banana
- Oats, 1 cup (8 oz)
- Whole grain flour, 2 oz
- Liquid honey, 6 tbsp
- Cinnamon, 1 tbsp
- Olive/coconut oil, 1 tbsp
- Baking powder, 1 tsp
For the Topping
- 1 medium apple
How to Make It
- Preheat the oven to 380°F; put the baking tray inside. Prepare the Dough
- Place peeled banana in a blender cup; then add the rest of the ingredients for the dough and mix well.
- You can also make the dough manually—just whisk eggs and honey; then add mashed banana and the rest of ingredients. Mix well using a tablespoon.
- Take an apple. Remove peel and stones; slice it into thin pieces.
- Prepare the tray—apply oil or place muffin cups inside.
- Pour out the dough. (It is enough dough for 12 muffins.) Fill each tray section to about three-fourths, as the dough will rise during baking.
- Add apple slices on the top (3–4 pieces per each muffin).
- Place the tray in the oven for 30 minutes.
- To check if the dough is ready just prick it with a fork—the pieces of the dough should not stick to the fork when you remove it. Extend the time by 5–10 minutes, if necessary.
