This simple soup is prepared with a premade broth in Spain leftovers from one of the bean soups popular at midday, flavored with diced Serrano ham and parsley, and fortified with hard-boiled egg.

How to Make It
- In a large pan, bring the broth, rice, and ham to a boil. Reduce the heat and simmer for 15 minutes, or until the rice is nearly tender.
- Add the eggs and simmer for another minute. Remove from the heat, then stir in the parsley and mint, if using. Serve piping hot.
