The Overnight Chia Oat Muesli is a easy and nutritious breakfast option that serves three. It's made with chia seeds, rolled oats, plain yoghurt, ground flaxseed (or you can switch it up with bran or more oats), and berries that you squish up with a fork. You mix these ingredients with some milk and let the mixture sit in the fridge overnight. This allows the chia seeds and oats to soak up all the goodness and flavors, giving a muesli by morning. You can stuff it up with some optional extras like grated apple, bran, ground almonds, diced dried pear, chopped nuts, fresh berries, or even a bit of passionfruit. Just remember, if you add more dry ingredients, throw in a bit more yoghurt or milk. It's a breeze to make, requiring only a large Tupperware and no cooking at all. Stir it up one more time to get everything mixed.

Ingredients
  • 85 g Chia Seeds
  • 50 g Rolled Oats
  • 375 g Plain Yoghurt (sheep, goat, soy or whatever takes your fancy)
  • 45 g Ground Flaxseed/Linseed (though feel free to substitute with bran or oats if you want some more slow-release carbs)
  • 2 handfuls of Berries, smooshed with a Fork (fresh or frozen)
  • 315 ml Milk
  • Grated apple, or bran or ground almonds (in which case, add the same quantity of yoghurt or milk, so it doesn’t all become too dry); a handful of diced dried pear and some chopped Brazil nuts or almonds; fresh berries or ½ passionfruit
Instructions
  1. Combining Base Ingredients:

    By mixing the chia seeds, oats, and yoghurt together in a bowl, ensuring the ingredients.

  2. Adding Flavors and Texture:

    To the base mixture, add in the flaxseed (or linseed), gently smooshed berries, and milk. Stir the mixture to prevent the chia seeds.

  3. Soaking for Perfection:

    Transfer the bowl to the refrigerator and let it rest for a minimum of 2 hours, allowing the mixture to soak and the flavors.

  4. Final Touches Before Serving:

    Before serving, give the mixture stir to ensure everything is well combined. By topping it with additional fruit, a dollop of yoghurt, and a sprinkle of seeds for added flavor.
