Description

Grilled Broccoli Steaks with Herb Sauce is a vibrant dish that serves four, transforming humble broccoli into a flavorsome delight. To begin, trim 1-2 heads of broccoli into thick steaks and season them with olive oil, chilli flakes, and sea salt. These are then grilled until perfectly charred, creating a delightful contrast in textures. The magic of this dish lies in its chimichurri sauce, a blend of fresh parsley, oregano, coriander leaves, and stems mixed with garlic, high-quality olive oil, orange zest, juice, and red wine vinegar. This sauce adds a fresh, tangy, and slightly spicy flavor to the broccoli, enhancing its natural taste. The addition of Brazil nuts brings a satisfying crunch, rounding off the dish nicely. Whether cooked on a barbecue or a grill pan, these broccoli steaks are a testament to the versatility of vegetables, offering, nutritious side or main that's bursting with color and flavor.

Ingredients
  • 2 Heads of Broccoli
  • 2 tbsp Olive Oil
  • 1 tbsp Dried Chilli Flakes
  • 35 g Brazil Nuts
  • Sea salt
  • Chimichurri
  • Fresh Flat-Leaf Parsley Leaves
  • Fresh Oregano Leaves
  • Coriander Leaves
  • Coriander Stems
  • ½ Garlic Clove, Peeled
  • 60 ml Olive oil
  • ½ Grated Zest of Orange
  • 2 tbsp Orange Juice
  • 1 tsp Red Wine Vinegar
  • Fresh Chilli
Instructions
  1. Creating the Chimichurri

Start by combining the fresh parsley, oregano, coriander leaves and stems, garlic, and olive oil in a blender or food processor. Blend these ingredients until they form a smooth sauce. Then, incorporate the orange zest and juice, along with the red wine vinegar, blending briefly to mix everything well.

  2. Seasoning the Sauce

Taste the chimichurri and adjust the seasoning by adding salt and fresh chilli according to your preference. If you feel the sauce could benefit from a stronger garlic flavor, feel free to grate in a bit more, but proceed with caution as the garlic's potency will intensify over time.

  3. Grilling the Broccoli Steaks

To cook the broccoli, first heat your barbecue or grill pan to a medium-high temperature. Lightly coat each broccoli steak with olive oil, then season with dried chilli flakes and a dash of sea salt. Grill the steaks under a closed hood or covered with a metal bowl, allowing them to char nicely and cook through, which should take about 5-6 minutes on each side.
