Preheat Oven:
Preheat the oven to 180°C/350°F/Gas 4.

Sear Chicken:
Add olive oil to a flameproof casserole dish over medium-high heat. Sear chicken pieces on each side. Remove and set aside.

Fry Bacon and Shallots:
In the same dish, fry bacon. Add shallots, garlic, and a few picked thyme leaves. Sauté for 5-7 minutes.

Combine Ingredients:
Return chicken and prunes to the dish. Pour in cider and bring to a boil.

Fold in beans, mustard, and remaining thyme sprigs. Add water if needed to halfway cover chicken. Cover and bake in the preheated oven for 1½-2 hours.
