Vichysoisse

This is a type of cream soup that is typically made with leeks and potatoes and served chilled. It is known as “vichyssoise,” which translates to “in the manner of Vichy,” a city in France. Despite its name, the soup did not actually originate in Vichy, but is instead attributed to a chef from the area. Vichyssoise is known for its rich and creamy texture, which is achieved by pureeing the leeks and potatoes with cream and chicken stock. It is often served as a refreshing and elegant appetizer or first course, particularly during the warmer months.
